Better Than Bakery Blueberry Streusel Muffins

Ok. These are good! I mean GOOD!

I love blueberry muffins and so I tried this recipe that I found on barbarabakes.com. Click here for the link to the recipe. This is a great recipe! Thank you barbarabakes.com!

She claims that this recipe came from a chef, and let me tell you, it tastes like it does. These muffins are large and soft bursting with wonderful blueberry flavor. They remind me of a cupcake so they are sweet and delicious! The streusel on top is just a perfect addition to this muffin.

These would be perfect for a brunch or with tea. It is also a great treat for breakfast or after-school snack! My oldest son would eat all of these muffins if I let him.

Blueberry Streusel Muffins

Ingredients – Muffin

2 Cups All-Purpose Flour

1 1/2 Teaspoon Baking Powder

1/2 Teaspoon Salt

1/2 Cup Unsalted Butter, Softened

1 Cup Sugar

2 Large Eggs

2 Teaspoons Vanilla Extract

1/2 Cup Milk

2 Cups Blueberries

Ingredients – Streusel

4 Tablespoons Sugar

1 Tablespoon Flour

2 Teaspoons Vegetable Oil

Directions

  1. Preheat oven to 350 degrees and grease a muffin tin (12).

  1. Combine the flour, baking powder, and salt in a small bowl.

  2. In a larger bowl or a mixer bowl, cream the sugar and butter. Add the vanilla, eggs, and milk. Mix thoroughly.

  3. Add the flour mixture and combine but do not over mix.

  4. Stir in the blueberries carefully.

  5. Evenly spoon the mixture into your greased muffin tin.

  6. Mix together all ingredients in a small bowl for the streusel topping. Spoon the mixture evenly on top of each muffin.

  7. Bake 20-35 minutes and cool before removing the muffin from the tin. You can use a knife to loosen the muffin from the tin by sliding the knife around the edges of the muffin.
